My habit of doing big meals and freezing them was born out of an inability to get food that I can eat close by + increased supervisory duties that mean I rarely get a lunch period where I can leave the building, but once you get in the habit, it's a big cost and time-saver. Sometimes with me it's total depression meals (pasta or throw a bunch of beans and tomatoes in the crockpot) but my advice is stock up on spices you like, which will make anything palatable.

I'm sorry about the mobility stuff, and the grief. I can't even imagine. Your mom sounded like such an amazing woman and such an important presence in your life.
